Happy *almost* Thanksgiving, friends!
I’m here this week with a recipe close to my heart via one of my heroes, Gabe’s grandma, who we lovingly called “G.”
Gabe and I have been together for 12 years and of those 12 years I celebrated nine Thanksgivings with his grandma. At each one, I always looked forward to dessert because dessert meant a slice of G’s perfect butterscotch pie.
As fate would have it, I learned how to make the pie straight from the master: from the pie crust to the filling. And though G is no longer with us, her butterscotch pie has not left our yearly family gathering – and I’m excited to share it with you all as a possible addition to your Thanksgiving lineup.
A couple of things to point out before I share the recipe with you…
- G always made her pie crust from scratch. If I have extra time, I do the same, but most times (as you’ll see in our video below) I make it with a frozen pie crust to save a step – just be sure you prep the frozen crust first before putting in your filling!
- Try making the pie the night before Thanksgiving for the best consistency! It takes a while for it to cool down so overnight (or at least 4 hours) is preferred before serving up a slice.
This holiday is filled with a lot of reflection about the matriarch we lost, G, who loved to host Thanksgiving and fill us to the brim with food. I’m so grateful for the family that’s still here helping us keep her memory alive with things as small as this pie. I’m especially grateful for my brother-in-law Trev and his help in piecing together the final recipe (our recipes from G were slightly different so we had to do some guess work to get the final product). Gabe joining me to make the pie for my followers was the cherry on top and I hope you all will attempt to make it (and tell me if you do)!
Finally, take this Thanksgiving to love on your loved ones in a big way. If I could have one more Thanksgiving with G to ask her more about her pie or who taught her how to make it, I would do anything for it. Instead, I’ll continue to make her pie in her honor and pass on the recipe to our future kids and grandchildren while I tell them about the time I learned how to make it from the master.
